Birthday Cheesecake



   Hey guys! Last week was my birthday and I made myself a cheesecake. Cheesecakes are the best, but I had to make it more festive. So I invented the birthday cheesecake! I don't care if someone has made it before because it was my birthday, and I'm the boss on my birthday. LOL





   Basically, it's just a cheesecake but with confetti sprinkles in the batter, then sprinkled with more sprinkles, and topped with strawberries and candles. It's so delicious!!! The cheesecake is so creamy, the sprinkles add colour and crunch, and the strawberries add tartness. I'm never going back to regular cheesecake.


Birthday Cheesecake

Servings: one 9 inch cake, 12 slices

   Ingredients

1 cup of biscuit crumbs
3 tbsp white sugar
3 tbsp melted butter

3 250g blocks of cream cheese
3/4 cup white sugar
3 large eggs
1/4 cup confetti sprinkles ( must be confetti sprinkles or else colour will bleed badly into cake)
6 strawberries
More sprinkles and candles for decoration

   Instructions

1. Stir together the biscuit crumbs, sugar and butter. Then press the mixture into a 9 inch springform pan. Bake in an oven preheated to 325F for 10 min.
2. Microwave the cream cheese for 30 seconds at a time to soften, but not melt. Then cream it, or whisk the cream cheese until smooth.
3. Add the sugar into the cream cheese and mix until smooth again. Then add in one egg at a time and mix until combined.
4. Slowly stir the sprinkles into the batter. Then bake in an oven preheated to 450F. After 10min, turn the heat down to 250F and bake for another 25min.
5. Open the oven door and let the cheesecake sit in the oven for 5 min. Then take it out and let it cool completely.
6. When cooled, put the cheesecake in the fridge until 10 min before serving. Run a knife around the edge of the pan and remove the edge of the pan.
7. Wash and cut strawberries in half. Then place them on the edge of the cake in a pattern of cut edge facing up and then facing down.
8. Sprinkle more sprinkles in the middle then add candles. Enjoy!
